Breakfast Scrambled Eggs in Mini Tortillas
Good evening everyone! You’re probably tired of breakfast smoothies, so I’m here with an easy scrambled eggs recipe in tiny whole wheat tortillas. I don’t eat eggs every day for breakfast so, when I do, it has to be good 🙂
I’m also loving how eggs are incredibly versatile, especially for breakfast recipes. I’m even thinking of making a Filipino egg-eggplant omelette recipe or tortang talong. You can try this scrambled eggs recipe with spinach, garlic, tomatoes, and mushrooms.


Ingredients for Breakfast Scrambled Eggs in Mini Tortillas:
- olive oil: extra virgin, a healthy oil to protect your heart!*
- onion: practically a must in ALL Filipino recipes
- mini bell peppers: adds a pop of color and rich in Vitamin C.
- salt and pepper: can’t forget these two besties!
- TJ’s Carb Savvy Tortillas with Whole Wheat: these tiny tortillas by Trader Joes are low carb and have the perfect soft texture
- eggs: I like mine scrambled— what about you?
- almond cheese: You can sub soy cheese or actual cheese.

Breakfast Scrambled Eggs in Mini Tortillas
Equipment
- skillet
Ingredients
- 2 tbsp olive oil
- 1 onion diced
- 3 mini bell peppers diced
- 1/4 tsp salt
- a pinch of pepper
- 4 TJ's Carb Savvy Tortillas with Whole Wheat tiny tortillas!
- 2 eggs
- 3 tbsp almond cheese or soy cheese
Instructions
- Heat oil in skillet on medium low- high heat. When hot, add onions and bell peppers.
- After 2 minutes, crack open the eggs and scramble. Add salt, pepper, and cheese.
- When eggs are cooked (about 2 minutes) remove eggs from skillet and serve on tortillas.
